Toll House Cookie Brittle

If you’re allergic to (or out of eggs) and need a cookie fix, I’ve got you covered. If you’re one of those January dieters, then this recipe is totally not for you, because it’s full of goodness (read: butter and refined sugar). It also doesn’t hurt that this recipe is quick and incredibly easy.

I dreamt last night of eating donut holes and sfinge (it was a great dream!) only to wake up and be disappointed that there was nary a baked good in the house, and I was fresh out of eggs to bake anything. I was telling my mom of my plight when she reminded me of her recipe for cookie brittle. My mother, she’s a good one!

Toll House Cookie Brittle

make sure you actually use 2 sticks of butter... luckily I remembered in time

1 cup (2 sticks) softened butter
1 1/2 tsp vanilla
1 tsp salt
1 c sugar
2 c flour
3/4 c mini chocolate chips
3/4 pecans (can use walnuts, or skip nuts if that’s what you’re into)

Preheat oven to 375.

Mix sugar and flour well in a large bowl. In separate bowl, mix butter, vanilla, and salt. Add to flour/sugar mixture. Press evenly in to an ungreased 9×13″ rimmed (must be rimmed!) cookie sheet. Gently press in chocolate chips and nuts on top. Bake until golden brown (about 12-14 minutes, but check at 10).

IMG_5443Let the pan cool completely, then flip over and break apart into pieces while trying not to eat them all at once.
