My New Favorite Granola

Is anyone else over the pumpkin obsession that happens every fall? I mean, I like pumpkin, but I don’t really need it in ALL THE THINGS. Anyway, all that to say, here’s a new recipe for something that has zero pumpkin in it. You’re welcome.

Also, full disclosure: I totally stole this recipe from my mom… but she doesn’t have a blog to share it on, anyway. Thanks, Ma!

Are you ready for this super-complicated recipe? Here goes:

In a bowl, mix the following:
1/2 c sliced almonds
1 c Nature Valley Protein Oats & Dark Chocolate Granola (I never said this was 100% from scratch)
1 c unsweetened flaked coconut
1 c pecans
1 c walnuts
1 c roasted, salted sunflower seeds
1 c raisins

It seems like a lot when you first make it, but it tends to go quickly, especially in this house when there’s little leg-clingers asking for bites, too! (Fear not, naysayers, Sophie’s intake is carefully monitored.) Go ahead, try it, and then feel accomplished for making something today.

This is the part where my mom would comment that it’s not salty enough for her… so adjust as necessary. Let me know if you try it, or share your favorite with me!

    Yes, Francine, you are right agin. I do think it would be fun to salt it up a little more. Actually I just tried a new ingredient today. I crunched up some yummy Aldi’s plain kettle chips and threw them in. It’s even more yummy in my humble opinion. : D
